Based on my experience, SCCM 2007 SP2 R2 can be running on Hyper-v well, I do all my SCCM test in Hyper-V environment,
Note:
To load WinPE in a Hyper-V you need to add a legacy network adapter to the VM instead of a synthetic NIC.
